That's some top quality food there ZC. Bet you were tired out afterwards! Which bhaji recipe did you use?
"Don't burn the spices" is the most dangerous truism of all - because it's incomplete. It should be "Don't burn the spices but do cook them!"

Tired ? Not as much as the wife after the cleaning up I left
the bahjis are much the same as other recipes, but these came out really nice..recipe here
credit to unclefrank for the overnight tip.. drying the onions out as much as posible definately makes a difference in my opinion

Nice spread ziggycat.
It sure is a long day in the kitchen doing numerous dishes. These BIR chefs make it look so easy (with their team doing all the preperation work)
