This is a fantastic curry and the best Korma recipe that I have tried to date. My young daughter will at present, only eat korma's, CTM's or butter chicken with Korma being her clear favourite. I've probably tried out 5 or 6 different recipes over the last couple of years and this is the clear winner. I was doubtful at first looking at how little sugar and cream in particular was in the recipe compared to what I had cooked previously. The taste is fantastic however and although the sweetness is less than the usual sickly sweet from other Korma recipes (no bad thing), it is still sweet enough, even with just the 1 Tbsp of sugar. My daughter said that this was the best Korma that I had cooked to date and on a par with the best she had tasted from a takeaway or restaurant.
Unfortunately, I forgot to take a photo of the finished article mainly due to being harangued to hand it over after being later than promised as to the time that dinner would be ready!

Re: February 2017 - Alchemist's Chicken Korma
This is a good korma. I also use a similar, small, amount of sugar in my korma and I really don't think it needs to be any sweeter than that. Sweetness alone shouldn't be the aim of this dish but the balance with the sugar, the spices, the coconut and the cream is what it''s all about and this recipe achieves it very well. Cloves were used here and I think that the Kitchen King Masala that I usually use has cloves and cinnamon in it so, overall, it would appear that we share similar tastes. Mutual genius, huh? (and modesty).

Is everybody adding the 1 tsp garam masala at the end or are you just using a sprinkle?

I stuck to my recipe, uf, when I made it. Given there are no other ground spices in this I think it needs the full amount.
