Solitary Christmas meal!
Well the other half flew off to Germany today and I'm not out till later! So time to
Reheat and cook up some favs:
Puppodoms with mixed pickle, mango chutney and home made onion salad
Chicken tikka bhuna (best tikka I've ever made, melts in the mouth)
Pilau rice
Fresh naan (as per happy Chris method)

The bhuna is a firm favourite and it's one of few I can knock up without needing the recipe nearby! This was actually made as a pour over sauce for the tikka and salad, but I combined the leftover sauce and meat and it's damn tasty!
Following westys simple pilau recipe which seems a winner to me!

Which recipes did you use for the tikka and for the Bhuna please shrink ?

A curry can never be ‘too garlicky’ or ‘too hot’ .....

The tikka is my own variation on a few recipes. I tend to just do it by eye! Like base gravy I don't think ultimately exact measurements matter all that much in tikka.
Marinade for 30 mins in lemon dressing and G&G paste. Then add a good tablespoon of tandoori masala, a tsp of mix powder, some methi, half a tsp of mustard powder and about a tsp of mint sauce. Add in enough yogurt to coat, stir well and leave in fridge for at least 2-3 hours.
Important to tenderness (especially on domestic grill) is that you take the chicken out the fridge for a bit before cooking. Let the mixture get close to room temp. That way it cooks quicker, puts the meat under less stress and retains moistness.

Feeling jealously miffed at this thread as it looks like I won't get a curry until Sunday. Meals in our house are more-or-less planned up to and including Boxing Day. I get to do curries after that, though, and have some frozen Atlantic king prawns, frozen large scallops and chicken breasts to choose from. Prawns and chicken are easy. For the scallops, torn between something fancy (baked salami/chorizo baskets with onion purée, seared scallop, mint and peas) or just noodles, base gravy and garlic/ginger/chilli splatted on top - suggestions welcome
