...had to make do with what I had (hence red peppers - no green -, half an onion and no tomatoes)

Were you pleased with it CA ? Looks rich & tasty to me.

I find that making up dishes with what's available can be nicer than a regular curry. My favourite is still Garlic chilli chicken dopiaza, the chunks of onion go so well with the sauce.

Give it a go & tell us what you think, obviously not everyones cup of tea, but my favourite.
