Do you buy (if so where and how much), or make Paneer? I tried making it once, but it turned out too crumbly.

Looks fantastic 976bar, I bet it took one hell of a lot of planning. Having an Indian night for 6 was a challenge for me. Clever choice of curries. I did similar for my small gathering..
