Re: Couple of curries from the weekend

Yes, I quite agree, Vindaloo is one where a complex mix of ingredients really pays off.

Re: Couple of curries from the weekend

Thanks for posting your results SP. I sometimes think less is more ; I went through a stage of making just a plain medium curry, not much chilli powder, just basics & they were lovely, so I can see where you are with your "Madras".

Re: Chicken chaat masala curry

I like asafoetida, haven't used it in a while but it does give a lovely distinctive flavour.

Re: Chicken chaat masala curry

It's something I've always meant to try but never got around to, did you use it in place of your mix powder SB ?

Re: Prawn Pathia

Thanks for posting your results, Pathia is a lovely curry, I remember buying some tamarind paste many years ago in Balham & the young girl asked me what I was going to make with it, when I said Pathia, she laughed & said what's that, a BIR invention but a good one.

Re: Chicken Korma

What quantity of condensed milk did you use SB ?

I've never tried using it, usually cream or evaporated milk.

Is that saffron I can see there ?

Yes as you say SB, no lovely red's going on, not a stunning looking curry but one of my favourite's on the BIR menu.

Thanks for posting SB.

I've never tried sweet potatoes in a curry, was it just the sweet flavour that didn't work for you ?

Re: Chicken Madras

It's all probably a question of personal taste, usually I add 3/4 to 1tsp of salt, perhaps more if there is a lot of vegetables like spinach or potatoes.

Just add a little at a time & keep tasting as you go.

I totally agree, the balance between salt & sugar is critical to the final taste. I usually add 2 teaspoons of sugar to a Madras.
