How Should Fenugreek Seeds be Used?
I was making a curry yesterday and discovered that I was out of dried methi. I have some fenugreek seeds but was reluctant to use them because I am not sure how to. Should they be added whole? Should they be crushed? In what quantity would you use them? I think that I bought them originally with a view to planting them and harvesting the result. Comments please!

Hi Elmore123, I would say that they aren’t interchangeable.
The seeds, even when roasted seem to add a bitter note & the flavour is, I find, quite different from the leaf. If you can't wait for the curry I would cook without them.

i think a few of mix powder recipes on this site have ground fenugreek included, but like steve says, i would not use them as a replacement for the dried methi.

well I googled it as I didnt know the difference between seeds and leaves..
methi/fenugreek powder is ground seeds which are used as a spice and is rather bitter
and dried methi/fenugreek leaves are used as a herb.. but can be ground also, and has a different much less bitter taste

For a bit of fun elm il give you three days to try and pestle and morter a teaspoon of fenugreek seeds, (good luck)

I bought whole seed fennelgreek instead of the powder, thinking they would yield a better flavour. Nearly broke my arm wrestling them with mortar and pestle. Next time I will stick to the powder.

I have been in many a indian ta kitchen and i always take a look at which whole spices they have in jars,there is only one room in my local ta so everything is there for you to see,i am yet to see fenugreek seeds,i would be interested to know if anyone as seen them in a kitchen for them selves.

Add them at the start and they magically disappear!
Remember panch poran? Well they are in that too.
Or you could try a spice grinder on them.
Or buy powder to start with.
Or stick to kasuri methi.

How long should I dry roast seeds for as I find them hard to grind even after I have roasted them.

If you have a day , or a good few hours to spare, the seeds sprout readily.
Just soak them for an hour or so and sprout them as Moong beans.
Then you will have FRESH Fenugreek.(Methi)
I have used this. It is good, but takes a bit of time.
