Chicken Bangalore
Made this last night, the last picture was taken with nothing done to it. Having not tried this dish really didn't know what to expect but i really enjoyed it and it was bl**dy hot with the one scotch bonnet added, will make again with a few little tweaks.

On the right of the last picture, there looks to be a nice bit of maillard going on. Do you have the dish on a warmer there?

They've been cooking on Blue Peter, now they're sampling the dishes,

No, it's a non slip mat thing, i tend to be a bit more bold when cooking my curries, taking them a little bit further in the cooking time and also a high heat, the base i used for this recipe is the Taz base, it is an excellent base recipe and gives a wonderful flavour and texture to the dishes, i just leave the dish to cook and mix and scrape the sides, it gives that lovely mallard, browning, you refer to.

Is the scotch bonnet chopped up btw, and if so did you de-seed it?

I deseeded the scotch bonnet and then just blended until smooth with a little base then added to dish. Think it may need a pinch of sugar added just to add a little sweetness to the dish, will make this again soon, just writing down some tweaks i may try, might work, might not it just means that i have a curry 3-4 days running.
