Looking delish! This is a dish I have to "enhance", jerrym's recipe is very good, but I have to give sam's recipe a good run.
One thing about cooking tomato that I find odd is that it never tastes great in my meals. Just today I came home with a TA portion of a jalfrezi and the tomato inside the dish tasted umami/sweet in an addictive kind of way like very well done food tastes (not that it was sweetened or anything of that sort)! does sam have any tips in this regard that you could include in the book (or share)?
