May 2017 - Willyeckerslike's Onion Bhajis

Hi all,

I made some Bhajis last night for family and friends who came over to Oz for a holiday.
I usually made Bhajis from another forum but i can't seem to source some of the ingredients so I adapted.
The comments were very very positive indeed, infact one guy ate 8! and never had curries :D he was too full!
So I thought I would post the recipe.

Thanks for this recipe Willy, onion bhaji's one of those things I am yet to master. The best ones I had was in spain, they were almost velvety. Can hardly explain what I mean by this though :)

I'm not familiar with aniseed, would ground fennel be a substitute ?

I would use ground fennel as a substitute.

My only concern is how to do this without egg? Anyone had any experience with that?

leave the onions soak in the spices and other ingredients overnight if possible, but don't add the egg. The amount of liquid that comes out of the onions is wet enough you may add a little water if needed.
The way this is done is to get the right amount of onion to the amount of gram flour. Seen this done in many restaurants local to me, they nearly always make the day before. I make about 100-150 in a week.

Had to give this a try
The curries I used to make lacked presentation and that let them down a bit
So these days as a meal, I have curry, bhajee, pakora, maybe rice, and naan
I freeze extra bhajees and pakora
They come back fine
I sometimes cheat and buy a few naans instead of making them
I buy some really lovely chilli naans by "the tasty bakery"
That's a brand sold in my local Asian shop
Anyhow
The predominant aroma when mixing up the Onion Bhajees, was the Tandoori paste
I was worried that it might overpower the flavour
But it didn't
They were lovely
I couldn't really tell the aniseed was in the recipe either
I think when I make them next, I might make the mixture a bit wetter
But that's a detail
Splendid bhajees, full of flavour, lots of compliments

PS: The first to provide feedback gets the privilege of selecting the recipe (from those already posted on the forum) for the following month. They are not obliged to write a new recipe (if that's what you're thinking?)!

I believe these will be aniseed seeds, pauly (perhaps Willy will confirm?). Fennel seeds are a good substitute.

Thanks for trying them Haldi, I think they look delicious.
My photo certainly doesn't do them justice! I make these for mates when we have a bbq and they all love them. Try a bit more aniseed seeds next time!
The aniseed is aniseed seeds as CA says. Fennel seeds will do but they (IMO) don't taste as good in a bhaji.
I have not had any success freezing bhajis at all, how do you reheat them? (probably been asked already somewhere I will look tomorrow)

I just gently sprinkled gram flour on, while stirring the mixture
I stopped when it got sticky, then left it 10 minutes before cooking
It was probably about 3/4 of a mug
I think the recipe might benefit from a small amount of water
Don't want the bhajees too dry

I just get the bhajees out a half hour before I need them
Then microwave in a takeaway container for 2 minutes
Keep the lid on a bit, so they don't dry out
I don't think they actually totally freeze
It's the oil that stops them

Thanks Haldi, I will give that a go next time I make some. Previously I had heated in the oven but didn't like the outcome as they weren't crispy enough.

We made these last night, I tried, without any success, to get aniseed but couldn't. I settled on some organic fennel that smells quite strongly of aniseed, much stronger than the usual.

Difficult to be sure if the aniseed would have made a difference but they were very nice.

They look beaut. Don't suppose there is another way of cooking them rather than deep frying? Not a fan of disposing of used oil

You could use the oil to start your base gravy stevie.
