Re: A few different Vindaloo’s

I've seen lots of recipes for Pork Vindaloo, but I've never had it
I don't think I've ever seen it in a BIR
It's not Halal meat, is it?
Does the vindaloo taste much different, to BIR chicken or lamb vindaloos?

Re: To soak or not to soak

I have been in quite a few takeaway kitchens

and have never seen anywhere soaking methi

It couldn't do any harm , but I can't see the point
it gets wet anyhow

I saw it used in a Balti the other week
It went in with the first base gravy
1/2 a teaspoon
very nice curry too!

Re: June 2017 - charliebir's Caramelised Onion Pillau

yum!
I've made this rice four times in the last month
The panch poran is an amazing spice mix
Up til recently I'd been mainly using "pillau" rice spices
This is such a nice change

Re: June 2017 - charliebir's Caramelised Onion Pillau

This recipe is really good I like rice and cook it a lot It's a very simple recipe But simple, when done right, is the best I cooked it to very positive results I made a couple of subtle changes The changes I made were pre heat the rice in it's carton, in a microwave, before adding to the onions Eve...

Re: May 2017 - Onion Bhajis, by Willyeckerslike

roughly how much gram flour did you use ?cheers I just gently sprinkled gram flour on, while stirring the mixture I stopped when it got sticky, then left it 10 minutes before cooking It was probably about 3/4 of a mug I think the recipe might benefit from a small amount of water Don't want the bhaj...

Re: December 2016 - Dipuraja's Chicken Tikka Biryani

I made this tonight I thought to give it, it's best chance I would make Dipuraja's base, spice mix and tikka It was good, but felt that the sauce let it down I don't rate his curry gravy The tikka itself is excellent Very good flavour and excellent aroma I would make this again, but change a few thi...

Re: November 2016 - steveparadox's Aloo Chaat

I've been dying to try this for weeks. I made fresh puri for it, too. I bought a lime so I could follow the recipe exactly. One of the best curries I have made. Absolutely delicious. Thanks for posting Steve. Out of interest, which base did you use? The slightly cooked cucumber works so well!

Re: H4ppy-Chris' Recipe Index

Very good idea to do this
Everything together and indexed
Although unfinished & no book, it remains the best filmed videos in a takeaway, ever
And the naan recipe is fantastic

Re: dried methi V fresh methi

I cooked a couple of "traditional" recipes with fresh methi
They were ok, but the most notable thing was that my perspiration stunk of curry
Really strong

I had a similar experience when we sprouted fenugreek seeds
We used them in a salad
The next day I had a curry aura
