Almost impossible to recreate that colour without mate! Either added to the main dish or to the tomato mixture they added. It certainly hasnt come from the base, as all the dishes would be over coloured. Plus I have witnessed first hand how other chefs get the same results.......colour 8-) Like i sa...

Looks a lovely feast there rs! The Madras resembling a Bhuna thickness, such a shame they used red colour for the dish, instead of allowing the natural colours of the spices and tomatoes to enhance the dish; which surprises me somewhat in the fact that the kebabs etc were kept au natural. Tasty none...

HB, you can always by fresh leaves from an Asian store or Market stall. Use sparingly though!

We use baking powder to assist in the rising of the dough. I know some chefs just rely on the flour and high temperature of the tandoor for good results, however, I find the finished Naan too stodgy without. No yogurt or yeast in restaurant naans chaps. Not in my experience and I have worked alongside many a tandoori chef. I am in no way knocking your results if it works for you, stick with it! :yes:
