I would ditch it, start again and do it properly, exactly according to the instructions (it's cheap and quick enough to make). Else you'll be forever running around in ever-increasing circles.

PS: I have moved your post and replies to here (since it's this curry base that you are referring to).

Well I did make it again on a 2nd attempt and followed the base sauce instructions to the exact "t" but used a yellow bell pepper instead of a green one as didnt have another green bell pepper. I like my currys sweet, do you think the base will be ok to use on my 2nd attempt where I did it all perfect except use a yellow bell peper rather than a green one?
I will be using the curry base for Rogan josh and Dopiaza

Sorry, I was really referring to your 1st attempt. With your 2nd attempt, substituting yellow capsicum for green capsicum is unlikely to make a huge difference (provided, as you say, everything else is done correctly) so I would use it. But I'd still make another, exactly to spec, for a "true" comparison.

PS: Have you added the ginger?

Thanks, no I did not add the ginger as really dont like the taste of it. So will try the 2nd attempt in next two days or so using one of the recipes on the forum. I will let you all know how it goes of course. Fingers crossed.

I'm going to try this one first because it seems relativity easy and I like the fact I won't have containers full if I get it wrong :):

Sensible approach to start with Paul - good luck with it , just follow the recipe and you'll be fine . Let us know how you get on

I've tried making a curry base before and it felt like an all day affair!...and it was awful.
This seems much simpler, can't wait.

Got your recipe for curry base gravies a few years ago and it's made a world of difference to my curries.

I have no access to the coriander root and stalks where I live. Is there something comparable to substitute?

There are limited substitutes for fresh coriander, Zoey (please see Fresh Coriander Substitutes? and Chat About Coriander). If you can't get it, just leave it out.

Ive done bases where I had to miss an odd thing out and its been fine. I think its more important to get the ingredients right when you make the final curry with the base.

How important is it for the base to be really smooth? I have a food processor but not a blender...

A food processor should blend it sufficiently fine.

I'm going to give this a try today. I've made gravies before but with much larger quantities. Typically 5kg of onions. I was always under the impression that larger quantities give a more authentic BIR flavour. I will give this smaller quantity a go a see how it compares.

Fantastic, rich, tasty, sweet, mildly spiced, and the quantities are perfectly proportioned. Made twice now, and both times I've been very satisfied. The second time i felt confident enough to up the quantities with hardly any extra time or effort. I only ever used to cook Indian food on the weekends. With this system it's opened up the whole week!

Hi Micky,

just use the stalks from corriander.... has a bit more flavour than the leaves.
