Had a crack of making an Australian Madras,it wasn’t great but ok to eat

Whats the difference between an Aussie and a BIR madras, Rusty?

All the Madras curries here seem to have a strong coconut flavour but very smooth consistency, in this dish I used coconut cream instead of desiccated coconut.

Aussie Madrases generally have coconut milk (or cream), mustard seeds and curry leaves in them.

They also tend to add desiccated coconut towards the end of cooking which thickens the sauce up

I normally use desiccated coconut but the Madras I have purchased does not seem to contain any, so are you saying I should use coconut cream and desiccated?

Hey mate,

Just going off what Raj told me. He said coconut milk with desiccated at the end to thicken the sauce up.

Do you use coconut in your restaurant Madras as your madras recipe on here has no coconut

No Rusty, we never used coconut, but Raj taught me how AIR would cook a Madras. Personally, I think the BIR Madras is far superior

I’ll ask next time I see him.

I know there is a good chef spoon of onion/tomato gravy (which is basically the Karahi recipe I put on here) along with stock and spices, coconut etc. I’ll it post up when I finding out more
