Wife asked for her favourite, Chicken Kandari. Accidentally went overboard on the colouring, but reasonably content considering she asked for it at 4pm!

Well done, Lakie. It seems you made it yourself? How did you end up making it? How did it compare with that from your local BIR that you were looking to replicate? Can you post your recipe (in the relevant recipe section) please?

Once I get it down pat I'll post a proper recipe. I've only had it there once, I'm using my wife as the judge, and will probably do a side by side one day when I've got it down to a level I'm happy with.
This was a case of told at 4pm 'I want your Kandari'. It was marinaded for all of 90mins, and I stuffed the colouring :lol: so not quite as normal.
The restaurant definitely adds the pomegranate etc after marinade for cooking, but I can't get a depth of flavour doing it that way.
So, I basically add pomegranate powder and fennel to a standard tikka marinade. You want just a hint of fennel. Then in cooking the tikka I glaze it with pomegranate juice.

Sounds like an interesting dish, never had it before or seen it on a menu but always looking for new things to try as I like to do a large platter of different starters, looking forward to they recipe
