Thursday Night Food

Post by unclefrank »

Hi all, made this Thursday night.
For the Madras you can use any one then add 1 tomato chopped and 2 blocks spinach the frozen ones.
CTM recipe is CA's here http://bircurries.co.uk/forum/viewtopic.php?f=259&t=500 with this one i cook the ingredients with out adding any liquid until i get a nice dark coloured dry paste then add 100ml base and the chicken and cook until chicken is sealed then add the other ingredients, you end up with a dark red coloured sauce with a lovely back of the throat sweetness.
Chicken Ceylon is CA's here http://bircurries.co.uk/forum/viewtopic.php?f=250&t=226
Paratha/Roti type thing 2 cups atta flour, 1 cup warm milk, salt, black pepper. Mix together to make a soft dough then cook on tawa with a little oil.

Thanks for the kind comments, i have also been adding 1 tsp ginger and garlic paste to the Chicken Tikka Masala and cooking this in the oil and butter, stated in recipe, until quite dark in colour and the flavour that comes out when the dish is finished is wonderful, i sometimes add a few slit green chillies to it as well to spice it up a bit if the other half feels in a spicy mood
