Alchemist's Madras, Saag, Dopiaza & Accompaniments

Post by Alchemist »

Today's weekly curry fix: Madras made with Mr Naga (based on MBCs retro madras), chicken and vegetable saag (made up by me) and chicken dopiaza (once again made up, worked out well so may post the recipe). All very nice, with happy naans, rice, Raitha and TA onion bhajis.

Brilliant table of food Alchy. Your Dopiaza is intriguing. I'm assuming you got a very smoky flavour scorching onions on the burner ?

The onions were just softened. I used onion powder as an experiment and this really worked well. Cooked on high heat on the burner to try and get the intense flavours of BIR. My son said it was excellent. Let's hope I can reproduce it!

Looking excellent as always Alchy. I love the new Aldi tableware too ;) I assume you meant daily curry fix not weekly curry fix?:

Well, weekly curry cook, to be more accurate :-). This week I have a TA, BIR restaurant meal and Rshome's Pistanda for the weekend night shift (cooked by the celebrity chef himself) to look forward to!

Looks great Alchy, and a fine choice of Asahi to wash it all down with I must say.

@ Alchy

What alterations did you make the the original MBC Madras retro recipe apart from Mr Naga ?

I was in discussions with MBC about his retro Madras before he fell overboard. . . . .

Made it once and thought it was very good. . . . .

BTW food looks superb in photo's

Grim, just reduced the chilli powder and added some Mr Naga. I think it's better to spec, the Mr Naga does overpower the flavours somewhat.
