Alchemist's Curries & Accompaniments
After the sad demise of the popular thread of a similar name I thought I would run one for my own meals.
Tonight it was MBCs Retro Beef Madras (with added homemade chilli paste), my own vegetable masala, and rshomes South Indian Tamarind chicken curry (review to be posted in the relevant thread, since it was the first time I've made this).
Served with Happy Non yeast garlic Naans, my made up cumin rice (cumin powder and seeds with salt), Raitha, TA bought bhajis and chapattis (cause the wife said she did not like naans but on seeing them made a grab for one!)
Everything was delicious, but the Madras was the best curry I've ever made, right up there with the best I've eaten in any BIR, texture, flavour, seasoning, everything bang on (I believe I have reached curry Nirvana!). The naans were top quality as well, crispy base, charred top, fluffy and soft inside.
A lot of work, but well worth the time invested.

Just reference to BIR curry action thread, I made a couple of curries and added them to a previous thread titled " a couple of curries I also posted one of those curries in the members recipe thread as like you first time I had made this.
Outcome one photo was removed and the second curry pic was deleted and a new thread was started so I believe you can't keep adding to your own thread and must start a new one each time. And if it's a members recipe it must be posted in the recipe thread not here

Looks great Alchemist.
Was it MBC's 1st madras or second, one features Pakistani Basar and the other doesn't. He said he was going for a retro madras in both recipes. I still need to try his vindaloo recipe come to think of it

I've been speaking to ex member MBC who has been playing around with higher oil content bases which he thinks need blending for a long time to create an 'emulsion'. As my base already had quite a lot of oil in it I reblended it in my powerful jug blender for several minutes.
I also used some homemade chilli paste, which added a nice flavour and heat.
Finally cooked on the high output burner and nearly burnt it, as the heat was on full!
I'm just guessing, but maybe one or all of the above helped to raise the bar on this one. Suffice to say more trials needed!

Totally concur Alchy, more oil = better curry. What blender did you use? Might try it in mine, but it is such a gutless beast I'd welcome any pointers as to kit.

Sorry sp, missed your question. It was the first one. I think the addition of the chilli paste (naga chillies blending with a little vinegar and oil brought it to a new level though.

Interesting.... where did you get your naga chillies from btw? I haven't been able to find them anywhere.
