I am a big fan of marinated meat because it brings something extra to the curry and helps keep the meat tender.
Here is some chicken that has been marinated for 24 hours I then sear all sides on the barbecue and finish for 15 minutes in a pre heated oven on 200.
Ready for a tonight's chicken vindaloo.

Onion,cloves,coriander,cumin,turmeric,pepper,chillies,garlic,ginger,tamarind and vinegar.
