Very good a nice change with the sweet and sour. I made it to how Sam makes it at the takeaway.

Patia one of my favourites. Best with fresh lemon juice, and brown sugar/jaggery.

One of my favourites, if a chef can get the balance between the sweet & sour, then I'll try something else on the menu.

I wouldn't mind a recipe for this one as I personally find getting the ratios of souring and sweetening agents almost impossible to figure out when only trying it occasionally. I prefer to make mine with tamarind and mango chutney but I do struggle to get it right.

Try 1 tbsp each of sugar, lemon dressing & mango chutney.

Looking good there Chris. Patia wasn't on the menu on my TAs, so I never got around to try it. I've seen recipes, but I have no biased idea so that I know what to expect and as such I have never dared trying it. For those people using lemon dressing (i.e pride, jif) I highly recommend that you try it straight on your mouth. It is way bitter and less flavourful than the actual lemon juice. This may be why the balance is harder to get right
