...and an aubergine vindaloo for good luck
So the lamb vindy was using some thinned down old Rshome123's base from the freezer, Chukit's vindaloo style paste, some home made kashmiri masala paste near the end, and a tomato thrown in for good luck . Made for a happy Wednesday night supper
Had some aubergines left over so made a vindaloo out of that using similar recipe. I browned the aubergine beforehand, and added later in the process than I would the meat, to stop it going mushy. Gave this 1 away to my GF who loved it !
