Lamb vindaloo ish..

...and an aubergine vindaloo for good luck :cool2:

So the lamb vindy was using some thinned down old Rshome123's base from the freezer, Chukit's vindaloo style paste, some home made kashmiri masala paste near the end, and a tomato thrown in for good luck :D. Made for a happy Wednesday night supper

Had some aubergines left over so made a vindaloo out of that using similar recipe. I browned the aubergine beforehand, and added later in the process than I would the meat, to stop it going mushy. Gave this 1 away to my GF who loved it !

A curry can never be ‘too garlicky’ or ‘too hot’ .....
