Chicken Phal

Post by Cory Ander »

The rest of my family (well, my dear wife, actually) decided they would all have bangers and mash today.....so I (declined and) took the opportunity to have a (stinky hot) Chicken Phal instead:

As one (if one is in their right mind!) would! :P

Did it on the fly, Rich, as any half-decent home cook is honour bound to! ;)

But (roughly):

vegetable oil (lots of)
puréed garlic
cubed chicken breast
salt
spice mix
Kashmiri spice paste
cassia bark (a very small piece)
hot chilli powder (lots)
kashmiri chilli powder (some)
fresh habeneros (one chopped whole)
dried fenugreek leaves (crushed)
tomato paste (diluted)
curry base (normal 300ml or so)
sugar (a tad, to taste)
fresh coriander leaves
garam masala (a sprinkle)
all purpose seasoning (a sprinkle)

No commercial pastes (I lie, I added some Kashmiri paste...it's all I had, and it's quite hot!). No pickles. No florets. No rose petals. No chips. No pretentious nomenclature. Nada ;)

But a damned fine tasting, traditional, British Phal, from yesteryear

I'll post a proper recipe (if anyone is interested)?

HELLO CA,
Nothing wrong with good old bangers & mash (now and then), But here is a simple way to give it a kick..
All done in one pot, Brown the sausages, add a few bits of chopped chorizo, Tspoon worcestershire sauce,
Tspoon soy sauce, Tspoon vinegar, Tspoon - chilli, turmeric, paprika, tin of baked beans and 200ml of chicken stock.
Simmer for 20 mins.. JOB DONE,. But i would proffer the phal..!

Stuning job as always CA, very good presentation. How did it taste? Was it better or worst than your usual?

More vinegar, because worcestershire sauce doesn't have enough, am I right? ;-)
