bhuna - rogan josh - ctm

Post by goncalo »

So I had some family visiting over and I made some curry. Very good feedback, eating til exhaustion. The main dish was CTM, but they wanted a rogan josh as a side and I took the opportunity to give JerryM's recipe a try. Will repeat! The tikka was IFFU's recipe. The only let down was the dough that for some reason didn't prove and was overly sticky. I think the problem was that I didn't knead it enough initially, but oh well.

Beef bhuna from yesterday (was meant to be a vindaloo, but changed my mind last minute.)

Thanks, I feel the same beachbum. Everytime I start a new diet and decide to come peak these forums for a breakthrough or anything exciting, it always works against me. Oh well!

Sorry I didn't get to read this earlier :)

I don't follow a specific recipe, it's all a bit in my head and it works out as concoction everytime, except for the Red Massala which is Mick Crawford's (CBM Book #1) (a spiced yogurt) and the tikka marinade (iffu's tikka). For the creamier dishes, I prefer to taste as I go.

Make a korma and swap the amount of almonds with the amount of coconut and vice versa (i.e 1 hpd chef almonds, 1 lvl chef coconut flour). Just before adding the tikka, add um chef spoon of red masala. Garnish with flaked almonds and single cream.
