Believe it or not the best Saag Aloo I've ever had was at a Shopping Centre "bain marie" food court stall - I used to head for there every time we went shopping. The owners hardly spoke English and had a few surprising "traditional" dishes on offer like a Brinjal and potato curry and a couple of veg curries with paneer. Once they had run out of a tray and instead of just removing the tray and bringing out the new one, the guy just came out of the kitchen with a plastic tub of curry and filled the tray from that. I couldn't help but notice that the bucket was from Butter Ghee, which was remarkable for a food court operation. Then it changed hands and next trip it was just bland, boring "cook to Australian tastes" stuff like Lamb Madras, Butter Chicken, Chicken Korma - all really dumbed down.

Been looking for a decent Saag Aloo recipe for yonks.
