Chicken Madras / Chicken Korma / Onion Bhaji / Garlic Naan
Many thanks to all of the contributors on this site.
I have been cooking my own curries for a while now, but up until a few weeks ago, none of them have used the base gravy and add spices method, and i can now say that i'm totally convinced! There's just no comparison to what i was cooking before compared to now...thanks guys.
Here's a meal i cooked for friends and family tonight. Chicken Madras / Chicken Korma / Onion Bhaji / Rice / Garlic Naan.
It's deffo the sort of meal that you'd pay for....it was amazing

Congrats, Neil, looks like a great success. It's great when a meal comes together, especially when you've got guests and the pressure is on!

Hi Cory!
OK, the base gravy / korma and madras were yours mate! Top notch!
The Onion Bhaji and Naan were Julians from YouTube.
All in all, a fab combo...and thanks to you both
I must admit that i did marinate and pre-cook the chicken following Julians YouTube, but can't say i noticed much of a difference to be honest. Well, not enough difference for the amount of extra work involved anyway. Normally i would have used non marinated and non-pre-cooked chicken thigh at room temp, but decided to try the marinated / pre-cooked breast to see if there was any gain, but i gotta say that although it's not BIR, i'll stick with my unmarinated thigh from now on as it always seems tender and doesn't take another process (marinating and pre-cooking) to get a decent result, plus it saves my precious base gravy too.
It's horses for course though i guess?
I'm glad i gave it a go though..
The rest of it was SPOT ON!
