9.5/10, absolutely thrilled with everything I cooked - base - precooks - main dish. I had a very positive vibe while the base cooked away last night as everything was smelling right, much like a TA. I would have gone to 10/10, had the presentation been more appealing. The rice was made in my new rice cooker, came out a bit dry, but wasn't too bad. I just finished eating and I am anxious to make another curry now! Underneath all this, there was a savoury sweet red film of oil.

Hi Rich,
I used my base in its current iteration which I haven't posted about yet (essentially dropped a few things from the recipe, including the coconut block). I have decided to leave off all experimentation, focus on technique and on getting everything right (baghar, no burning, sticking around the pans while everything cooks). Also, taking no shortcuts (made garlic paste this time.) - I can document this if you would like to give it a try Rich

Only just realized I wrote the dish as "garlic chilli masala" - it was not masala, just a standard garlic chilli chicken.

I have the same problem with my newly bought rice cooker. I think you need to add just a little more water than the 1:1 ratio that the instructions suggest.

rshome123 Tip with the rice cooker m8t, Once it reaches its temprature give it a stir, do not let it stick as the rice burns and sticks to the bottom of the bowl, Soon as it goes soft remove from the heat, It does need a few stirs whilst cooking,

Pauly, I'll picture the bag tomorrow. I can send you some if you want, it's a 5kg bag available from a eurospar shop.
The good aspect of the rice being so dry, is that it works wonders for byriani. I have just finished one for tomorrows lunch, but it was good that I've finished it off. The rice mellows a little, but still keeps a bit of bite. Maybe an extra tbsp of water will do to get it right

Thanks snoopy. I didn't get that problem, BTW.
In fairness, I changed water about 10 times and let the rice sit in water for a good 45-60mins. I also used some TSPs of tandoori masala infused veg oil, but no flavour really imparted into the rice.

Forgot to respond, it's "Chef's Choice Basmati Rice" - Not sure if it is the rice or me, but I wouldn't buy it again. :-)pauly wrote:What brand of rice did you use there goncalo ? Looks nice.
