Homestyle Rogan Josh. Not BIR. Still have not managed to come up with Rogan Josh I like. I think it's the yoghurt not cooking for long enough that puts me off.

Can I ask what the dish in the background of the traditional style Chettinad chicken curry is? It looks great, if you could post a link to it that would be much appreciated. These pictures are simply superb.

I'm not sure what that is as it's many, many curries ago but by the flecks of tomato my guess is some variant of a dish one of my co-workers turned me on to. I tinker with it regularly as it has great bones. I doubt I'll get away with posting a link (no you won't, indirect or otherwise - Admin). It's really good. Fresh tomato (summer time) is when this recipe works best. Next time I make my variant I'll try to remember to post it (please do - Admin) but if you can't wait just make it as written or substitute a bit of panch foran for the mustard and cumin seed and green finger hot chili for jalapeño. Or don't. Make it once as written and join me in project tinker Maybe not as good as Westy's simple Dahl but a contender for second place I think...

OK - fair enough.
I won't post a recipe without a good pic so it may be a while.
DamienD - think of it as an upside down tarka. Heat some oil and fry some cumin and mustard seed or panch phoran. Add an chopped onion and some green chili - maybe a bit of mix powder. Add some masoor dahl and whole garlic and fry. Add turmeric, water and simmer until you get close to that soupy Dahl texture. Toss in a chopped fresh tomato and cook it until you do get the soupy texture. Add salt to taste. Garnish with some chili rings and coriander. Like it hotter add some chili powder. Like it sour add a squirt of lemon. Mix in a bit of spinach like in your Korma It really is a fun recipe to tinker with...
