Homemade masala paste

Home made masala paste and chicken madras, (Pro base) Beautiful. The masala paste was added at the beginning of the dish Easy simple, The flavour is quite amazing,

That Madras looks bang on Snoopy. Do you have a recipe for the Masala Paste? Is this something new you have picked up from a TA?

Thank you mads for the compliment, No mate its my own doing, Which as quite took me by surprise, This is only on the quotation that everyone keeps banging on about pataks pastes they see in BIR kitchens( Not that ive seen any) But! This paste was mentioned on the website where i got the pro base recipe from, This was made by the chef to to add to various dishs to give a nice distinctive flavour, All said and done it really does add a new dimension with a great outcome of the final dish, Ive tried to post the recipe in the onion paste section but theres no icon saying new post, If i post anywhere else the gaffa(CA) will be spitting feathers :yes:
Will post as soon as i can, ADMIN! Madras was superb by the way :yes:

Looks very authentic BIR dish, snoops, especially the copious quantity of oil on top!!

Thanks alchy, Yes i use a little more oil than most, One of the major factors of a good curry,

I agree, snoops, otherwise the TAs would not do it. It tend to pour it off before serving though, makes no odds to the flavour once cooked as far as I can tell.

Thanks kp, Yes alchy i do normally scoop it off but as you say once its done its job thats it, Just left it on for the pic really as it looked good in the pan and good for a picture,
