Looks a lovely feast there rs! The Madras resembling a Bhuna thickness, such a shame they used red colour for the dish, instead of allowing the natural colours of the spices and tomatoes to enhance the dish; which surprises me somewhat in the fact that the kebabs etc were kept au natural. Tasty nonetheless, just my opinion 8-)

Adey, I'm not convinced there was any food colouring in the Madras. What gives you that idea ?

Almost impossible to recreate that colour without mate! Either added to the main dish or to the tomato mixture they added. It certainly hasnt come from the base, as all the dishes would be over coloured. Plus I have witnessed first hand how other chefs get the same results.......colour 8-) Like i said Rich, just my opinion. A.

It was a great evening once again fellas and fantastic food......once again.

I'm not convinced that there was food colouring added to the Madras, I'm pretty certain the colouring was achieved by the huge amount of tomato purée in the dish. I reckon, there was as much tomato purée as there was base gravy in the Madras, But, very tasty it was.

it's On my list to try to re-create this dish. I've bought a couple of tins of White Toweer purée......thanks for the tip fellas. Looking forward to getting back and giving it a go with this purée
