Vegetarian Recipe Index

I have taken over maintaining the Vegetarian Recipe Index. Please share your vegetarian BIR (or, at least, available in a BIR near you even if not available in every BIR) recipes.

1] Post your recipe in the appropriate place, complete with photos
2] PM me - preferably with a link to the recipe - and I will add it to the index.

Pre-cooked ingredients

Pre-cooked Vegetables (adeypayne) - Cook in advance and freeze in handy sized portions.
Precooked Potatoes (Natterjack) - Use in Bombay aloo and other vegetarian curries.
Precooked Vegetables (goncalo) - Using frozen veg. and a bit of cabbage.
Parboiled Chopped Onion (jerrym) - Soften and season the onions ready for a quick frying later.
Precooked Saag/Saag Bahji (chukitinabukit) - Pre-cook saag and freeze it for use in several dishes; recipe for saag bhaji included.


Rice with vegetables (For other rice recipes, see the Rice section of the main recipes index).

Mushroom Pilau (Bandit) - A decent ammount of mushrooms. Looks a treat.
Mushroom Rice (ScotchBonnet) - A very basic rice and mushroom recipe without spice or chilli.
Special Fried Mushroom Rice (Dragonsfire) - Brown rice, red peppers, mushroom, peas.
Greybeard's Indian fried rice - Rice, onion, mushroom, peas, egg, tomatoes.
Special Fried Rice (rshome123) - Rice, onion, mushroom, peas, egg. Plenty of ingredients but clear recipe plus video.
Mushroom Pilau (Westy) - Nice and easy - does what it says on the tin.
Badami Mushroom Pilau (slicker55) - Rice, mushroom, almonds, crispy onions.
Dipuraja1's Mushroom Fried Rice (Dipuraja1 / Cory Ander) - BIR chef's video with recipe transcribed by CA.
Vegetable Pilau Rice (Cory Ander) - Almost a vegetable biryani. With a side sauce and some bread this would make a main meal.

Chana Masala (unclefrank)
Chana Masala (MickyD) - A “drier” side dish of chickpeas in spices including cloves.
South Indian Chickpeas (quick and easy) (rsaha)
Chana Masala (TikkaTom)

Aloo Chana (Top House)
Chana Curry (TiptonNick)
Katte Chole (MonsieurBadgerCheese) - Spiced chickpea curry with chilli, fresh ginger and mango powder.
Rajma Masala (ScotchBonnet) - Red kidney beans in spicy gravy.
Aloo Chana (TopHouse) - Chickpea and potato, onion, green pepper.
Chana Masala (steveparadox) - Video + transcription of recipe from Chini Chor Vegetarian restaurant, Hounslow.
Spicy Chickpeas (kentishman) - A simple recipe to jazz up tinned chickpeas.
Chickpea and Butternut Curry (simonides) - Chickpeas and chunks of butternut squash in a masala gravy.


Dhal - Lentils, peas or beans create a dish that varies in thickness from a soup to a stew.

Dhal (rshome123) - A fair few ingredients but clear recipe and video.
Great Simple Dhal (Westy) - Simple recipe with good reviews.
Tarka Dhal (pauly) - Simple boiled dhal with garlic and cumin fried in ghee / oil and added at the end.
5 Minute Tarka Dhal (Salvador Dhali) - A pressure-cooker dhal recipe.
Dhal - Anglo-Indian Goan Recipe (seafret) - Dhal with mustard seeds and curry leaves.
Dahl Fry (rsaha) - Dhal boiled first then other ingredients fried and dhal mixed in.
Dhal/Tarka Dhal (Cory Ander) - Boiled then tarka added. Clear recipe plus video.
Tarka Daal (Steveparadox) - Recipe looks a bit more involved but results are reportedly worth it.
Tarka Dhal Version 2 (Steveparadox) - A variant of this member's tasty dhal.
One Pot Dal (ScotchBonnet) - A simple dhal made in one pot. Bit of a no-brainer.
Anthing Dahl (rsaha) - Essentially a boiled dhal with a BIR - style curry sauce stirred in.
Dal Makhani (rsaha) - Made with urad dhal (as opposed to red lentils); takes longer to cook but looks delicious.
Storecupboard Pressure Cooker Dhal (ScotchBonnet) - Easy dhal for the electric pressure cooker using red and brown lentils.
Seafret's Dhal - made with red lentils plus some green ones for a bit of texture.


Pakoras - Vegetables coated in gram flour batter or chopped and mixed throughout the batter, then fried.

Spinach Potato Pakora (unclefrank) - Potato and spinach are mixed with rice flour in addition to the usual gram flour.
Potato & Methi Pakoras (unclefrank) - Sliced potatoes are coated in spiced batter and fried.
Paneer Pakora (unclefrank) - Pieces of spiced paneer coated in batter.
Mushroom Pakora (MonsieurBadgerCheese) - The mushrooms are chopped and mixed in the batter rather than being in chunks.
Mushroom Pakoras (seafret) - Another chopped (as opposed to coated with batter) mushroom pakora recipe.
Vegetable Pakora (alexwilkie12) - This recipe is for about 10 portions.


Onion Bhaji - Balls or patties of onion combined with flour and then fried until crispy.

Mushroom Bhaji - Not crispy like onion bhaji but soft mushrooms coated with sauce of varying consistency.

Mushroom Matar (ScotchBonnet) - With the addition of peas.


Brinjal / Begun Bhaji - Aubergine (eggplant) variously fried, combined with other vegetables, with or without sauce.

Bhinda Bhaji (StevenHeap)
Aubergine Bhaji (unclefrank)
Brinjal Bhaji (beachbum) - It's all about the aubergines; quite saucy.
Brinjal Bhaji (rshome123) - Aubergine, onion, tomato; includes pictures and a video.
Aubergine Bhaji (unclefrank) - Big slices of aubergine, coated in spice and fried; not a saucy dish.
Begun Bhaji (Geeezah) - Aubergine chips which are battered and deep fried.


Other Bhaji and side dishes

Saag Bhaji (Westy)
Saag Bahji (chukitinabukit) - How to pre-cook the saag and then how to use it to make saag bhaji.
Methi roast pepper and onions (Greybeard)
Kachumber (unclefrank) - A salad of cucumber, onion, tomato with a chilli kick.
Besan Mirchi (ScotchBonnet) - Green pepper fried with gram flour.
Chilla (ScotchBonnet) - Slightly crispy pancakes made with a very easy chickpea batter.


Aloo (potato) dishes - The humble spud is often taken for granted but it provides energy, fibre and essential amino acids; you can live off potatoes (qv The Martian, Irish Potato Famine).

Bombay Aloo / Bombay Potatoes - A fairly dry dish where potatoes are the star and are coated in spice and a little gravy.

Aloo Gobi - A classic, with bite-sized potato pieces and cauliflower florets, coated in a delicately-spiced sauce.

Saag Aloo - Potato is combined with spinach or other green leaves and typically has a lightly-spiced and buttery finish.

Aloo Chat (steveparadox) - A tasty potato dish with the addition of cooked cucumber.
Bombay salt and chilli potato bakes (alexaWilkie12) - Potaatoes are boiled, spices added then the potatoes are baked in the oven.
Aloo Chana (TopHouse) - To the potatoes are added chickpea, onion and green pepper.
Microwaved Bombay Potatoes (rfr) - Does what it says on the tin.
Bengal Aloo (NOT Bombay Aloo) (Dave99) - Deep-fried potatoes featuring panch phoron and spices.
Aloo Methi (spiceyokooko) - Fresh fenugreek leaves or dried methi can be used for this dish.
Potato Madras (Andrw) - an interesting curry-in-a-hurry with a bit of a kick.
Aloo Chana Hot Jalfrezi Style (DamienD) - A substantial and spicey vegetarian meal with potato, chickpeas and scorched vegetables.

Paneer (cheese) dishes - Paneer is a fresh cheese made by curdling milk using lemon juice, vinegar or citric acid; it can be a great source of protein as well as being tasty and versatile.

Saag Paneer (rshome123) - Cheese pieces in a whole lotta green stuff; gets good reviews.
Saag Paneer (Steveparadox) - Cheese, spinach, tomato, onion.
Saag Paneer (Banit) - Cheese, spinach, bit of a chilli kick; great photoś and step-by step recipe.
Mattar Paneer (pauly) - This recipe takes you through making your own paneer and then cooking this lovely dish.
Matar Paneer (ScotchBonnet) - Indian cheese 'n' peas in a thick, spicey gravy.
Naga Paneer (Steveparadox) - Cheese pieces bathing in a sauce with a kick.
Paneer Korai (Steveparadox) - Cheese, onion, red pepper, tomato.
Kadai Paneer Masala (ScotchBonnet) - Cheese, onion, capsicum, passata, ground cashew nut.
Paneer Pakora (unclefrank) - This recipe is in the pakora section as well.
Kadai Paneer (simonides) - Cheese, onion, green pepper, spices. Nice, clear instructions and photos.


Vegetable curries

Vegetable Masala (Alchemist) - Spiced vegetables in a thick gravy (no runny base gravy needed).
Simple Vegetable Curry (rshome123) - It does what it says on the tin; great pictures and video included.
Rajasthani mixed vegetable (ScotchBonnet) - A vegetable curry thickened with powdered nuts giving it a creamy feel (but non-dairy).
Vegetable Biryani (ScotchBonnet) - A quick, TA-style, rice and veg. dish.
Vegetable Dhansak (6CJRQO) - Vegetables and lentils in a thick gravy; includes video.
Vegetable Madras (haldi) - Based upon observations of a real BIR chef cooking this curry.
Kashmiri Gobi Rogan Josh (simonides) - A traditional-style, cauliflower curry.

I have now re-ordered the recipes according to type rather than author. Probably need a few more main dishes before I can come up with a taxonomy for that section!

Looking forward to having a veggie curry cooking session this weekend trying our some new ones here!

Please let me know of any recipes that need adding and I will continue to maintain this index and help to keep you lot a little healthier! :-)
