Rusty's Curry Base

Hi All
Here is my curry base that I have been using for many months now, i have experimented with this base several ways including boiling the onions and oven roasting the onions all with good results.
I finally decided that frying the onions gave me the most consistent Base in taste and texture every time, maybe it's an Aussie thing 8-)
I know frying the onions in a base is technically not BIR, but I can easily fry 4 kilos of onions on the barbecue in one go and as most home bases have 1 kilo of onions,this should be achievable to most members.
The base itself is pretty simple in spices and ingredients which is great when heading to the supermarket.

This base would best described as lightly spiced with a hint of sweetness, ready to go consistancy with a nice aroma.

Prep ingredients

Blend tomato

Curry powder used

Frying of onions 15/20 mins

Garlic/ ginger fried added onion and curry powder

Add purée tomatoes

Add water simmer 40 minutes you should get nice oil separation

Hand blend then blended again with nutri bullett

Finished base 6 x 600ml

Looks nice Rusty, I may try frying the onions for longer next time I'm making a base, I'm sure it will add an extra something.

ha ha, yes like Mr everready said frying them onions must bring an extra sweetness to the base.

I think that would be lovely on its own. It looks like a lovely creamy tomato soup. Frying the onions definately adds a nice flavour to a base and frying at the beginning cuts down on the amount of boiling time needed. How long did it take to caramelise all of those onions?

The onions take 15/20 mins I have changed my base a little but still fry the onions to cut down the need for a long boil + I now can make a small base as I reckon fresh makes better curries

That looks great. That's quite a lot of tomatoes in it. Frying the onions first definitely improves the flavour.
