Re: October 2018 - adeypayne's Shatkora
Looks like our local TA may also have difficulty getting Shatkora.
Using Calmansi Lemon.
Not Adeys choice, but might be a reasonable substitute.

Hi Steve
Where do you get your frozen shatkora from ?
I remember Rick Stein cooking this dish on his Indian tv show and I think he said grapefruit was an option ?
After I saw RS cook this I tried it and LOVE it, usually I go for lamb shatkora

Hi Franpip,
I go to a small grocers in Camberley, Surrey. There are places around brick lane in London that also sell it. Im sure there are lots more bit I have my go to place now so haven't really looked elsewhere.
I'd say a worthy substitute would be a combination of grapefruit and lime. I'd heard others mention the Rick stein grapefruit suggestion

Re: October 2018 - adeypayne's Shatkora
Hi All,
Managed to source some frozen Satkara which according to Wikipedia is the same as Shatkora, I gathered the extensive list of ingredients together and did all the prep and got started cooking Adey's Chicken Shatkora.
I didn't have black Cumin so I used normal Cumin and the other issue I had was the lack if spring onions which I substituted with finely sliced shallots.
The cook went Ok, followed the recipe without any issues but used more gravy than stated as this was going to be for two of us, I've never had a Shatkora from a TA or restaurant so I didn't have any comparison to work with, anyway I enjoyed it and you can definitely taste the citrus coming through, it was not as hot as I thought it would be but the sliced chillies that I used were not that hot anyway so that may have had and impact on the final dish.
I did enjoy it but would I cook it again, not to sure as there are a lot of ingredients to prep, if I have the time yes I would as it is a good contrast if you are prepping a few curries for the evening and would provide a different range contrasting flavours. I would like to try it with fresh Shatkora not frozen next time as that would be easier to zest, this curry, over all from me and the other half.
Managed to get some pictures uploaded finally, hope you enjoy them and I hope I did Adey's recipe justice
It's definitely worth a try if you like different types/flavour of curries, we both enjoyed it but then I have not come across a curry on here that I have not liked just some are preferable to others, I just like to keep it simple and not over complicate things, I don't think I have many taste receptors on my tongue as the missus picks out more flavours from the curries I cook that I can.

Re: October 2018 - adeypayne's Shatkora
Hi Damian,
I think that grapefruit could be used as a substitute having tasted shatkora which is sort of a cross between grapefruit and lime.
There is lime in the recipe already but I think it is the zest that mainly give it the shatkora twist, I would like to try fresh as the frozen was a pain to zest and the flesh was mainly mush.
If you can’t get shatkora give grapefruit a try but think about the size ratio, shatkora is about the size of a large lemon, grapefruit is much bigger as the recipe calls for a quarter.
Look on Wikipedia as there are a few different names for Shatkora also you can buy it online
Hope that helps

Re: October 2018 - adeypayne's Shatkora
I just watched the latest episode of ‘the recipes that made me’ which was about bangaleshi food and interestingly featured a shatkora curry being made in a BIR (albeit a traditional version of this curry).
The presenter asked the chef, ‘what would you use if you couldn’t get a shatkora?’. The chefs reply was ‘orange peel (or) tangerine peel’.
The presenter also smelled the shatkora and described it as ‘lemony with a slight orange tang to it’.

Re: October 2018 - adeypayne's Shatkora
I popped down to my local market where there are a couple of Bengali grocers. There was no fresh shatkora anywhere to be seen among the many exotic fruit and vegetables. One of the grocers informed me that they do stock fresh shatkora but not at this time of year as it is only available later in the year. Fortunately they had the frozen variety so I bought that.
I made this curry to spec (with the exception of using frozen shatkora). I was quite surprised at how strong the flavour of the shatkora was, tasted to me like a lemony grapefruit. There is alot going on in this curry, a fair bit of prep involved but the end result was quite pleasant. I quite liked the addition of ghee and the mr naga went quite well with the shatkora and lime flavours.
Overall a welcome change to my usual vindaloos and nagas and definitely something I will try again (I think with beef next time). Thanks for the recipe Adey and thanks to Steve, nice choice for this month.

Still not found a shatkora, frozen or fresh, but did find a jar of shatkora pickle, maybe later in the year then.

Stunami- try using the shatkora pickle. That's what most curry houses use!

Stunami - did you try this recipe then?
Re: October 2018 - adeypayne's Shatkora
No, I'd run out of base and didn't have all the ingredients for this so I just made one from scratch, didn't follow any particular recipe, just threw the usual in, fried onions, tomato puree, coconut block g/g some frozen crushed red chilies which are quite good, spiced oil, mango chutney, c powder and some laziza biryani powder. Oh and the shatkora pickle ( well duh ) Then I finished off with some okra, tindora coriander and prawns. I don't always get away with it when I don't follow recipes but this one worked really well.
