August 2018 - Steveparadox's Pathia
Re: August 2018 - Steveparadox's Pathia
I love Pathia so I'm dying to try this. I'm also quite a cooking noob so please forgive me when I ask:
What are these two ingredients: mix powder and base gravy?
Thank you,
Andy.

Re: August 2018 - Steveparadox's Pathia
I decided to give this another go tonight, this time I scaled it up for 4 people... so I varied the amount of ingredients somewhat - I doubled the tamarind and chilli in an attempt to tone down the heat and the bitterness factor, 3 times the sugar - too much, 2 times would have been better! as it seemed the sweet factor was a bit on the high side, not overpowering but still a bit too noticeable and also doubled the lemon. I only doubled the Naga and in hindsight this was a wise move! For the salt I stuck with the recipe original amount as posted. Anyway, here is a picture, the original recipe (for 1) was still definitely better than my attempt at multipiication!

They all look like fantastic curries guys, well done!
I’m liking the the look of that caramelisation on yours Damien, bet that is tasty (reminds me of a classic balti style curry). Good job.

Re: August 2018 - Steveparadox's Pathia
I want to have a crack at this tomorrow.
I can't find any Naga here and I've been to a couple Indian Grocers. What's a good substitute? Can it be left out?
Also I've got a jar of Tamico brand Tamarind Concentrate. I'm guessing this isn't directly interchangeable with Tamarind Sauce, which is another item that doesn't seem to be available here. So how much concentrate should I use or how should I turn it into a sauce?

Check out the Chilli Paste/Sauces for alternatives to Mr Naga, aushy. Or make your own (if you do a search of the forum, you'll find some threads where other members have tried to make their own Mr Naga paste).
Check the Tamarind section where you'll find some threads on using alternative types of tamarind.

Great photo of your original, and subsequent clones.
Pathia is one of our favourites.
Will definitely try soon.
Short of a couple of ingredients , but might try substitutes.
