Thanks for the recipe and pic's. That is a proper runny, oily mean-looking curry. I will give it a go but I reserve the right to use Chinese black vinegar rather than cider vinegar (because that's what I got and because my quick-fix vindaloo is to take my garlic chilli chicken recipe and add chilli, cloves, black pepper and black vinegar (about 1 Tbsp per portion).

No worries guys, I think the vinegar is a personal preference on what type you use.

I was in the market for making a BIR vindaloo for lunch today anyway. Made a disastrous pork vindaloo in the slow cooker yesterday, wanted to salvage the remaining pork and use in a BIR sauce. Rusty's definitely fits the bill. The result... very tasty :)

Presentation might not be up to scratch though, the pork fell to pieces in the slow cooker!

I wanted to try this as much for the method as the recipe. I've always been a ginger/garlic paste-mix powder-tomato puree-base gravy etc. man & I must admit I was somewhat dubious of the put it all in method. I remember watching the early Diparajah vids, where I think he got down to around four mins for a Madras.

I didn't have any yellow mustard seeds so I took them out of my wife's mixed pickle mix, there's dedication to the cause, or as my wife said, daft. It only took a few minutes to pull out the 1/4 tsp.

I halved everything to make a single portion. It went together very easily & the oil split well. I did add two teaspoons of sugar at the end for my taste, & a nice flavour with the cider vinegar adding something different to my usual malt vinegar.

Looks very good Pauly thanks for trying, I think as you said adding sugar is a personal thing and I used too but since frying the onions in my base I leave the sugar out in most dishes.
I cook using this method on all the recipes I try, I still add ingredients later on if the recipe states i.e. Garam masala, fresh coriander, vinegar ect

I am going to try this tonight. Thanks for the recipe, it looks amazing.
However, i only have brown mustard seeds - hopefully won't alter it too much. :thumbup:
