Here is my attempt. I think this is a great dish to practice technique on, as there is really no where to hide! My later attempts were defo better than the first one.

Please can anybody advise as this will be my first attempt of cooking a BIR style curry.
Can you simply double quantities to make this for more than one, or would it over spice and ruin what looks like a lovely Madras.

DaveC... Hi. As a beginner, I would recommend making single portions at first. Follow the recipe to the letter. The most important part is the method of cooking, which I hope you will latch onto. For example, fry the powdered spices properly, caramelise the base gravy with minimal stirring (it is SO tempting to stir sometimes, just avoid and learn where the edge of the envelope is).

Hi, Dave, follow RSH advice.
When you do not stir the curry, it will splat all over the place.
Be patient, give it a couple of minutes, the solids will settle to the bottom of the pan, leaving a thin gravy at the surface and the splatting will die down a good bit !
Then the solids will caramelise. Perfect.

Ditto. Follow the recipe to the letter. It anyway makes 2 modest portions. The time to experiment is once you have developed experience and confidence. If you do so, beforehand, you'll undoubtedly chase your tail with lacklustre results.

Thanks a lot for the input guys, running before learning to walk I guess.
I'll give it a good bash tomorrow once I've been to my local Asian store for all the goodies.

Had a go at it this afternoon. Here are a few photos.
Opinion: A very nice tasty Madras curry that is reminiscent of some takeaways and restaurants I have eaten from in the past. I was a little surprised to see so little tomato puree used, and that there is no lemon juice/dressing in the recipe. It tasted pretty close to most Madras's I've had from some good BIR places.
I think this is the ideal recipe for practising technique with, because the ingredients are limited, and as Alchy said, there's nowhere to hide. The sweetness from the base gravy caramelisation should ideally be enough for the dish though, without adding in the 1 tsp Sugar (as a non-optional part of the recipe), but then that's another can of worms to open.
I like the way the recipe uses raw chicken, not that I prefer it to pre-cooked, but that it will be more appealing to the beginner or someone with little time on their hands.
All in all, a great Madras curry, and I'm impressed with the layers flavour, despite missing more tomato, and lemon juice.

So far everyone that's tried this is commenting on how full flavoured it is bearing in mind the minimal ingredients list . It really is a surprise that first mouthful - a pleasant surprise too

Yes Alchy, I think it was about 360ml, plus a dash of water near the end. I like madras sauce that way.

It turned out great, my son loved it. Bit to hot for my daughter!
I used a base from a few recipes put together. It had cabbage, pineapple, lychee, apple and Achni stock added. That's the only difference to the base I noted on here today!
I used my new James Martin grinder for the Fenugreek as only had seeds in the cupboard. I definitely need to work on the caramelisation you've all mentioned though. Not come across that technique before!
