Here are tonights dinner.
Chicken and mushroom tikka massala and,
Chicken and mushroom garlic chilli.

Both was loosely based on RShomes recipes and both tasted amazing!!

Hi Dan I am normally a breast man but recently have been using thigh and must admit goes great in a tikka/tandoori marinade.

I used CA tikka/tandoori marinade with mustard oil used instead of veg and no milk, for tandoori powder; I used a level tbsp of east end tandoori masala, 0.5tsp Shan tandoori masala and 0.5tsp patak tikka paste. That's my go to recipe for tikka/tandoori, for me I gives the perfect taste.

The thighs have a richer flavour and more succulent texture. I find they cook much better in a domestic oven compared to breast tikka, which I find dry. Maybe it's how I cook it.

The curry was an experimental recipe, oil from pataks tikka jar, the left over marinade and bit of garlic pickle were the only spices used. I have made better. I have yet to make a tikka masala I'm happy with, something is not quite right- what that is I do not know.

its really good, i use Laziza tandoori paste. I had salmon tikka last night with yoghurt, peshwari rice and westys dhal

Fancy somthing fruity tonight so going to give mango chicken another bash, tried it recently and enjoyed it loads, going to tweak it a bit and try adding a little mango pulp in addition to whole pieces of fresh mango, any advice on when to add (at what stage of the cooking process) the pulp greatfully recieved.

Steve - Westy's. It was a tad too hot I remember as I added a tad too much chilli powder. The Kashmiri powder gives it a lovely colour though.

Had a curry in the local BIR last night and was disappointed that it wasn't as good as home made ones, so today is base gravy day, and Keema Madras for dinner.

I'm doing a double (3kg of onions) of my fave rshome123 base - my stockpot can just about cope!!


edit: No it can't - I've totally misjudged what 4L of water looks like, so I'm making a double double concentrate base by accident :clown:

Last night I fancied creating my version of chana masala, as I first had it from Riverside Indian Restaurant in Hampton. It has always been my favourite chana masala, and I first tried it as a 17 year old and it hasnt changed. It has a Chicken Tikka Masala style sauce but is more complex than others I have tried. I could never quite put my finger on it, but learning a lot about spices in recent years, I put it down to a combination of:

fennel
coconut
sugar
cream
almonds

with that in mind I put together a series of ingredients and created a dish which really did capture the essence of this dish and I was very pleased to have created something that came so close to the one I have always enjoyed, and never properly experienced at other restaurants. I wish I had written it down at the time, but I will do so based on recollection and type it up in due course.
