Freezing fenugreek leaves

Post by Bigwullie »

What's the best way to freeze fresh fenugreek leaves?
Would you blanch them first then place in an ice cube tray?
Any pointers would be appreciated

I would put them in a freezer bag and squeeze all the air out and secure them tightly.

My local Tesco, sells bags of frozen fenugreek leaves. Are these ok to substitute in dishes that list dried fenugreek leaves ? I am a novice to indian cooking and have a lot of questions, and it is a bit bewildering at the moment  so any advice /help would be appreciated. :):

Hi mg99,
Dried methi (fenugreek) is generally used differently to fresh.
It's best to treat the fresh or frozen stuff like spinach. The leaves and stems are often wilted in dishes like aloo methi, although use of the fresh leaves is more common in home cooking than BIR.
The dried leaves have a much more pungent flavour and aroma and they are usually added sparingly to sauces - just a pinch is enough.
Hope that helps.

You're looking for a box something like this. 100g goes a long way.

Where I live, it's hard to get a lot of the necessary ingredients for BIR cooking, so I've reverted to ordering off 'that great big online store'

Dried Methi leaves was something I had to order online, but when they came they were in 2 x 100g bags! I was wondering if it's OK to freeze the excess until needed, (along with some similarly sized dried kashmiri chillis)?

You could freeze them if you wanted but stored in the dark in an airtight container would be fine, I keep my dried kashmiri chillis the same way. You might find this thread Dried Methi - Shelf Life of interest Red_Snappa.
