Methi tastes the same whether crushed or not !

Hi all,

Tin hat on.

I cannot taste a difference between methi leaves thrown in the dish from a packet and leaves "crushed between your fingers"

What am I missing ??????

I crush it to break up any hard bits, so they cook down better and don't end up between my teeth. Nothing to do with flavour from my point of view.

I haven't noticed any difference in taste either, but it affects the texture and appearance a tiny bit if there are any stalky bits of methi.

I don't think it affects the flavour but after a visit to a restaurant many years ago, I got a sharp piece of stalk embedded in the back of my tongue, necessitating a trip to the hospital after it swelled up. the doctor who removed it was Indian & laughed when I told him how I got it, he said I should change my restaurant. Funnily enough, I check for sharp stalky bits now.

I'm with the rest of the lads on this one.
I only rub the methi between finger and thumb to aid in removing the woody stems.
No chage in flavor as far as I am concerned.

I believe that crumbling it will undoubtedly release more flavour too (i.e. new surface and larger surface area).

I crumble it to render the pieces too small for fussy kids to shove to the sides of their plates. Otherwise, I kind of subscribe to the idea that they pack the stuff in the optimum size for use rather as tea is packed (apart from some very particular stuff such as whole-leaf chai).

I am with chukit on this one,the first couple of restaurants i worked did not use it,i think the curries were better in those days,when i have forgot to put it in any of my dishes or run out i dont think i have missed it.
