Re: Meet up in NW England
Thanks Rich, I'm not worried about it being just one night. I have lived in UK and from times to times I get a craving for visiting the UK (BIR craving, if ya know what I mean :-)

Not snoopy, but the bengal mix is a garam masala variation. It's mostly composed of aromatics.
The color of the madras reminds me of my favourite curries I get here in Ireland. How did you rate it?

tikka ceylon + veg fried pilau
Tonight's tea was a chicken Ceylon, a dish I haven't seen outside of UK so far and I was dying to have again. Made using a mix of Stephen Lindsay's and CA's recipe for chicken ceylon and first time using Maggi Coconut Milk Powder as opposed to coconut flour, creamed block or tinned coconut milk and ...

Re: a few pics from Curried away :)
Interesting place Adey. I admire your drive to make a business out of your passion. One question that I wondered for a while was whether you compare your curries to those of Abdul's and how do you find that they differ and also whether you still spend time appreciating/observing Abdul's cooking, to ...

Re: Shatkora Recipe
I spoke to the head chef/owner of Royal Spice in Cambridge and he told me he used 2 tsps of pran shatkora pickle. Now, I've tried his food many a times and trying to follow his advice, I didn't find the flavour I was looking for with the 2 TSPs and in fact, the shatkora pieces in the curry added for...

I forgot to mention that one strange thing missing in this base is tomatoes (not that there is a commandments of base gravies that states tomatoes MUST be used)

Forgot to respond, it's "Chef's Choice Basmati Rice" - Not sure if it is the rice or me, but I wouldn't buy it again. :-)pauly wrote:What brand of rice did you use there goncalo ? Looks nice.

I love a shatkora curry, sadly finding fresh shatkora here isn't trivial...
I'm eager to try your recipe. Have you tried the shatkora pickle?

Re: chicken madras
The pakistani base has this "strange" flavour which is kind of sweet... it feels somewhat unbalanced. I didn't like it; The chicken stock didn't add anything noticeable to the flavour, as far as I can tell. Posted the mix powder recipe here: http://bircurries.co.uk/forum/viewtopic.php?f=42...
