Upma
Upma is the Southern Indian answer to Polenta, made on semolina or cornmeal, normally as a breakfast dish. I was feeling "riced out" and made this actually on Polenta with ghee, onion, garlic, ginger, curry leaves, turmeric and some home grown green chilli. upma.jpg Luverly comfort food, h...

Re: Methi Powder
Non BIR alert  In Southern India they say "when you see Fenugreek, curry leaves aren't far away". For Aussie traditional old school curries, fenugreek powder is the signature flavour of Keen's curry powder. Whenever I serve a fenugreek smelling curry to a local their first comment...

Re: Methi Leaves (dried) in a Madras or Not?
Methi leaves seem to feature in most of the BIR YouTube videos, as well as coriander leaves sprinkled over the result. Like CA I don't recall the usage of either in the Good Old Days.. in fact I never heard of Coriander until I discovered it to my alarm in a Vietnamese Pork Roll (Banh Mi) about ten ...

Re: Curry at Christmas
Went into Aldi this morning for my fortnightly shop. They had a big range of chicken and meat half price to clear, obviously stocked up too much for the holiday. My freezer is groaning at the moment - so many animals had to die  plus I scored about a kilo and a half of forequarter lamb chops ...

I think there are a couple of guys on forums who brew on boats, if not yourself. You're welcome to the recipe but it's fully mashed all-grain and y...

On my recent restocking trip to Newcastle NSW I picked up a pack of Soy Wadi dried TVP chunks. http://www.desimart.com/Bansi-Soya-Chunks-7oz If cooked until tender and with the right seasonings you'd swear you were eating chicken... might be to your wife's taste. I usually do them in a sweet and sou...

Re: Kasoori Methi in the UK?
Amazing, that a plant smelling like a manky old pea pod can be dried out to such a fragrant herb. I got about 4 heaped TBSPs that will keep me going for a couple of months. (A4 Sheet displayed for scale, also a recipe for Brains SA - been emailing the head brewer   ). Now although we hav...

We've got a hot dry 30 degrees today so I'm just air drying them in a wok in the shade.
edit: I'll play some Bollywood music at it.

Almost there, I'll do the deed on Monday
I've got a little bench top convection oven that blows hot air, I'll set it to low for an hour and see what happens.

Re: Kasoori Methi in the UK?
Been in for eight days and looking frisky already :D I just used a couple of supermarket trays with ventilation holes in that had held fruit, sitting in a plant pot "saucer". The seeds were just from a local deli that sells spices out of big jars by the scoopful and it was obviously a nice...

Found them in a deli, I bought 200g and will do a search on growing them. I guess soak them overnight then sow under a thin layer of seed raising mixture?

Re: Kasoori Methi in the UK?
I talked to an Indian shopkeeper last year and he said you need to let them flower, maybe that's the trick. Will try again this year when I can get some seeds. It's actually grown as a cattle forage in QLD (being a legume and soil improver) so I guess there's only part of its lifecycle when it has t...

Re: Kasoori Methi in the UK?
Looks the goods. How's the aroma? When I tried growing it, the flavour was more like pea pods. Don't have any methi seeds at the moment but will be stocking up on spices soon.
