Re: Alchemist's Madras, Saag, Dopiaza & Accompaniments

Grim, just reduced the chilli powder and added some Mr Naga. I think it's better to spec, the Mr Naga does overpower the flavours somewhat.

Re: Alchemist's Madras, Saag, Dopiaza & Accompaniments

Well, weekly curry cook, to be more accurate :-). This week I have a TA, BIR restaurant meal and Rshome's Pistanda for the weekend night shift (cooked by the celebrity chef himself) to look forward to!

Re: Alchemist's Madras, Saag, Dopiaza & Accompaniments

The onions were just softened. I used onion powder as an experiment and this really worked well. Cooked on high heat on the burner to try and get the intense flavours of BIR. My son said it was excellent. Let's hope I can reproduce it!

Alchemist's Madras, Saag, Dopiaza & Accompaniments

Today's weekly curry fix: Madras made with Mr Naga (based on MBCs retro madras), chicken and vegetable saag (made up by me) and chicken dopiaza (once again made up, worked out well so may post the recipe). All very nice, with happy naans, rice, Raitha and TA onion bhajis.

Re: Ashton-Under-Lyne meet up 12th March

BI, I was going to have a cooking session over at chez moi, followed by a trip to one of the local curry houses. Still keen to prove to you that the high output burner rules :-)

Re: Ashton-Under-Lyne meet up 12th March

The best we could do would be an artists impression! The food was good and the place nicely done out and very busy, even though it was 5pm. I've certainly had better and can produce better at home, but no real complaints, just the moanings of a BIR perfectionist :):

Garam, I've been using rshome's base. Nice and easy to make and creates great curries.

Re: Alchemist's BIR Curry Action

Cheers CA. The photo was of a dish similar to MBCs Retro Madras , which I have cooked before and posted a review of on the thread. I played around with it this time, adding some homemade chilli paste, which I think improved it even more. I think this is now my favourite dish on the forum, especially...

Ashton-Under-Lyne meet up 12th March

As myself and Rshome are already planning to meet up to exchange some recently purchased curry related goods next Sunday, I thought I would have another go at trying to tempt any local members to join us. It will take place at 5pm on Sunday 12th March at The Indian Plaza, see here for details etc. W...
