Almost impossible to recreate that colour without mate! Either added to the main dish or to the tomato mixture they added. Looks a lovely feast there rs! The Madras resembling a Bhuna thickness, such a shame they used red colour for the dish, instead of allowing the natural colours of the spices and tomatoes to enhance the dish; which surprises me somewhat in the fact that the kebabs etc were kept au natural. Tasty none...

We use baking powder to assist in the rising of the dough. No yogurt or yeast in restaurant naans chaps. Not in my experience and I have worked alongside many a tandoori chef. I am in no way knocking your results if it works for you, stick with it!

Good luck with the move up to a 60 seater place Adey. It's something myself and Raj have discussed several times, but rents are stupidly high here in WA.
